📌 Overview
These cherry buttercream muffins combine two-tone vanilla and cocoa cake with fresh cherries and a classic pudding-based buttercream. Dark chocolate and a fresh cherry complete the decoration. For a smooth frosting, the butter and vanilla pudding must be at approximately the same temperature when combined. The recipe makes six large muffins suitable for birthdays, afternoon coffee or a rich individual dessert.

👨🍳 How to make Cherry Buttercream Muffins with Chocolate
- 1
Line a six-hole large muffin tin with paper cases. Preheat the oven to 180°C conventional or 160°C fan.
- 2
Wash and dry the cherries carefully. Remove the stems and stones from 18 cherries. Reserve six attractive cherries with their stems for decoration.
- 3
Beat 125 g softened butter with the sugar, vanilla sugar and salt for 3 to 4 minutes until creamy.
- 4
Add the eggs one at a time, mixing thoroughly after each addition until the batter looks smooth again.
- 5
Combine the flour and baking powder in a separate bowl.
- 6
Mix the dry ingredients and 2 tablespoons of the milk briefly into the butter mixture. Stop as soon as a smooth, relatively thick batter forms.
- 7
Place approximately 1 well-heaped tablespoon of vanilla batter into each paper case.
- 8
Stir the cocoa powder into the remaining batter. If the chocolate batter becomes excessively stiff, add 1 teaspoon milk.
- 9
Divide the cocoa batter between the cases. Press three stoned cherries lightly into each muffin.
- 10
Bake on the middle shelf for approximately 25 minutes. Test an area without fruit; a wooden skewer should come out without wet batter.
- 11
Leave the muffins in the tin for 10 minutes, then transfer them to a wire rack and allow them to cool completely.
- 12
For the buttercream, combine the pudding powder with 20 g sugar. Remove about 6 tablespoons of the remaining cold milk and use it to mix the powder into a smooth paste.
- 13
Bring the remaining milk to the boil. Briefly remove the pan from the heat, whisk in the pudding mixture and return it to the heat for approximately 1 minute, stirring until very thick.
- 14
Transfer the pudding to a shallow bowl and place food wrap directly against its surface. Allow it to cool completely to room temperature. It must not be refrigerator-cold when combined with the butter.
- 15
Beat 125 g softened butter for 3 to 4 minutes until pale and creamy.
- 16
Add the room-temperature pudding to the butter one tablespoon at a time. Mix each addition in completely before adding the next.
- 17
Spread or pipe the buttercream over the completely cooled muffins. Refrigerate them for approximately 30 minutes.
- 18
Chop the couverture and melt it slowly over a warm bain-marie. The bowl must not touch the water, and no moisture should enter the chocolate.
- 19
Allow the melted chocolate to cool slightly, then drizzle or spread a thin layer over the chilled buttercream.
- 20
Decorate each muffin with a fresh cherry and return them to the refrigerator until serving.
🧠 Why It Works
The plain and cocoa batters form two visible layers without complicated marbling. Fresh cherries provide acidity and moisture, while the relatively thick cake batter prevents them from sinking completely. The butter and pudding must be at the same temperature so their fat and liquid components emulsify evenly. Chilling stabilises the buttercream before the warm chocolate is applied.
🛠️ Troubleshooting
Why does my pudding buttercream curdle?
The butter and pudding were probably at different temperatures, or the pudding was added too quickly. Both should be at room temperature. Add the pudding one tablespoon at a time and mix thoroughly.
How can I fix split buttercream?
If the mixture is too cold, warm the outside of the bowl briefly over lukewarm water while beating. If it is very soft and greasy, refrigerate it for 10 to 15 minutes and whip it again.
Why do the cherries sink to the bottom?
The fruit may have been very wet or the batter too thin. Dry the cherries thoroughly, press them in only lightly and add extra milk sparingly.
Why are my cherry muffins raw in the middle?
The fruit releases moisture during baking. Test the cake away from a cherry and bake for another 3 to 5 minutes if necessary. Cover loosely with baking paper if the tops are already dark.
Why does the buttercream melt beneath the chocolate?
The chocolate was still too hot or the frosting was not sufficiently chilled. Refrigerate the decorated muffins for at least 30 minutes and let the couverture cool slightly before applying it.
💡 Tips and Variations
- •
Outside the fresh cherry season, use thoroughly drained jarred sour cherries.
- •
For a stronger vanilla flavour, heat the pudding milk with the seeds of half a vanilla pod.
- •
Replace the dark couverture with milk chocolate for a noticeably sweeter finish.
- •
For a Black Forest variation, stir 1 tablespoon kirsch into the cooled pudding before combining it with the butter.
- •
Use a piping bag fitted with a large star nozzle for a more decorative buttercream topping.
- •
For twelve standard muffins, divide the batter between smaller cases and bake for about 18 to 20 minutes. The stated nutrition will no longer apply per muffin.
📦 Storage
- •
Keep the finished cherry buttercream muffins refrigerated because the frosting contains cooked milk pudding.
- •
Stored in a closed container, they remain fresh for up to 2 days.
- •
Remove the muffins from the refrigerator 15 to 20 minutes before serving so the cake and buttercream soften slightly.
- •
Do not leave them at warm room temperature for longer than approximately 1 hour.
- •
The undecorated muffins can be wrapped airtight and frozen for up to 3 months.
- •
Apply the buttercream and chocolate decoration after the muffins have thawed.
🍷 Pairing
- •
Serve the muffins with espresso, filter coffee or an unsweetened cappuccino.
- •
Black tea or a tart fruit tea balances the rich buttercream.
- •
For dessert, accompany the muffins with a few additional fresh cherries or berries.
- •
A small glass of cold milk complements the cocoa, vanilla and chocolate flavours.
❓ F.A.Q.
Can I make cherry buttercream muffins one day ahead?
Yes. The muffins and pudding can be prepared the day before. Bring the pudding to room temperature before making the buttercream. Refrigerate fully decorated muffins overnight in a covered container.
Do the butter and pudding need to be the same temperature?
Yes. Both should be approximately at room temperature. A significant temperature difference can make the buttercream separate or become lumpy.
Can I use jarred cherries?
Yes. Drain the cherries for at least 10 minutes and pat them dry carefully. Excess cherry juice can make the muffin batter wet.
Can I serve the muffins without buttercream?
Yes. The two-tone cherry muffins can be cooled and decorated simply with icing sugar or melted chocolate.
Can cherry buttercream muffins be frozen?
It is best to freeze only the undecorated muffins. Pudding buttercream may lose its smooth texture and release moisture after thawing.
🏛️ History and Tradition
Cherry buttercream muffins combine American-inspired cupcakes with German-style pudding buttercream. Their two-tone cake resembles marble cake, while cherries and dark chocolate draw on a familiar pairing used throughout Central European baking and patisserie.
- •
For smooth cherry buttercream muffins, the pudding and butter must be at the same temperature and combined gradually.
- •
Cool the muffins completely and chill the frosting before adding the couverture so every layer remains stable.
